Italian Roast Beef

INGREDIENTS

2-4 lb. roast (grass-fed, of course)
1 can beef broth
1 pkg. Good Seasons Italian dry dressing mix
5-6 pepperoncini peppers

DIRECTIONS

Put roast in crockpot and cover with beef broth. Cook on low for at least 8 hrs. Next, take the roast out of crockpot and shred, add a packet of seasoning to the broth, then put your roast back in. Finally, add your peppers, and simmer for 2 more hrs. ENJOY!

Leftovers make delicious sandwiches. I put them on hoagies, with provolone cheese. For all you farm wives like me who are always looking for new sandwich ideas to take to the field, these are PERFECT!

This is my husband’s favorite meal. I’m pretty sure he would have asked me to marry him sooner if I had made this 12 yrs ago.
