Beef with Snow Peas

INGREDIENTS

2 lbs. sirloin steak, sliced very thin against the grain
1/2 cup soy sauce
3 Tbs Cooking Sherry
2 Tbs brown sugar
2 Tbs cornstarch
1 Tbs minced fresh ginger
8 ounces garden fresh snow peas
5 whole scallions, cut into 5-inch pieces on the diagonal
salt, if needed
3 Tbs olive oil
crushed red pepper
Jasmine or long grain rice, cooked according to package

DIRECTIONS

In a bowl, mix together soy sauce, cooking sherry, brown sugar, cornstarch, and ginger. Add sliced meat to the bowl and toss with hands. Set aside. Heat oil in a heavy skillet, or wok. (I use a cast-iron skillet) Add snow peas and cook for about 1 minute. Remove. Allow pan to get very hot, then add half meat mixture, and half scallions, leaving most of the marinade in a bowl. Cook on each side for about 1 minute. I like to get it good and brown. Remove, and do the same thing to the other half of steak and scallions. When this batch is done, add the first batch back in with it, along with the rest of the marinade and snow peas. Stir over high heat 30 seconds to 1 minute. Turn off heat. Sauce will thicken. Serve over rice. Sprinkle with crushed red pepper to add a little spice. YUM!
